Das Achental and the Essence of Chiemgau

Located in the region of Chiemgau in the foothills of the Alps, Das Achental offers the best of German tradition for the modern traveler. At Das Achental in Chiemgau, southern Germany, Bavarian tradition meets international contemporary design. Housed in a set of classic buildings first constructed in the 1950s as an equestrienne farm, the space was renovated over the past few years to add a comprehensive wellness area and to refurbish nearly 200 guest accommodations, a 18-hole golf course, and multiple dining options, one of which received two Michelin stars in March 2022. The property’s 75-hectacre footprint unfolds over rolling grassland and is surrounded by the Chiemgau Alps with countless trails and the nearby Chiemsee lake. Rustic details like bespoke furniture created from aged wood are completed with a dark color palette and design pieces from Baxter, B&B Italia, Cassina, and Kettal, lighting fixtures by Occhio, Bocci, and Fritz Hansen, and carpets by Jan Kath and LPJ Studios.

Each of the 179 rooms and suites are defined by Alpine traditions, with Austrian loden blankets (regional wool textiles) and accent pillows, wood bedside tables, bedframes, and dining tables, and natural stone bathrooms. Organic toiletries are created specifically for the hotel by Chiemsee Liebe, and all suites are equipped with oversized soaking tubs. The Suite Chiemgau even has a private in-room sauna as well as a roof terrace overlooking the golf course.




One of the property’s standout features is its five onsite dining options, which offer everything from a gourmet experience to a lakeside afternoon tea. The property’s fine-dining restaurant ES:SENZ was awarded two Michelin stars in March 2022 and its chef, Edip Sigl, focuses on the essential essence of dishes. Fresh and regional produce define the set menu, which finds inspiration in the sights, sounds, and smells of Chiemgau. The chef, whose previous endeavors also received two Michelin stars, partners with local farmers for fresh vegetables and fruits, the fishery Fischerei Lex to receive fresh and sustainably caught fish from Chiemsee, and farmers in Seppenbauer for quail and chicken. Everything, including coffee and flour, is sourced regionally, with some ingredients even cultivated onsite in Das Achental’s herb garden and beehive. Beyond local produce partners, Sigl has also started collaborating with his network of star chefs to host the “ES:SENZ 4-Hands-Dinner” series, for which he and the invited chefs create exclusive one-night-only multi-course menus. Previous guests have included Juan Amador, whose Restaurant Amador in Vienna has three Michelin stars, and Christian Bau, whose restaurant in Perl, Germany, also has three Michelin stars.

Also under Sigl’s purview are Weißer Hirsch and the Hubertshütte. The former offers a sumptuous buffet for breakfast and regional delicacies for dinner, while the latter exudes a rustic ambiance set inside an original mountain hut with menu highlights that include the Achentaler Cheese Fondue. Additional outlets include the lakeside Seehütte10 and the Lounge & Bar, where live jazz is played every Friday. All of Das Achental’s dining options mirror ES:SENZ’s emphasis on organic, local food through partnerships with regional producers.

Newer to the property is a 2,000-square-meter wellness center. Here an outdoor/indoor infinity pool gives way to three saunas: an herbal sauna made from old wood with a copper boiler, a stone sauna made of slate, and a Finnish sauna made from Austrian stone pine. Sauna infusions with pure essential oils are part of the daily program, and the area also encompasses a traditional steam bath and a brine steam bath. Completing the offerings are Dornbracht “experience” showers with various jets, water cascades, and alternating sprays, as well as a light-flooded relaxation room outfitted with lounge chairs, swings, and floor-to-ceiling windows overlooking the mountains and gardens. The spa treatments available in the six dedicated rooms all use organic products by Team Dr Joseph, a company that refines natural active ingredients with the latest microtechnological processes and combines them with traditional knowledge to create holistic products and regimens. The wellness center and the gym, which is outfitted with Life Fitness equipment, also host daily classes for mind and body. The program includes aqua fitness, yoga, fascia and back training, and forest meditation sessions. Elsewhere on the property’s spacious grounds are a lake and a verdant orchard, plus 17 meeting rooms, each brimming with natural light, for private events of any kind.

Chiemgau’s essence is also reflected in the onsite 18-hole golf course, which is defined by wetland and water areas—a nod to the resort’s moorland location. Additional golf facilities include a performance studio, fitting center, 3D simulator, a driving range with 24 covered, partly heated courts, and a PGA Premium golf school. Since 2020, the golf course has been one of 36 bestowed with the Leading Gold Clubs of Germany seal of approval.

Location
Situated in the foothills of the Alps, Chiemgau is known for both its location on the Chiemsee lake as well as its proximity to the mountains. Nearby are numerous opportunities for everything from windsurfing and boating to skiing, cycling, and hiking. Chiemsee itself has two islands, the Fraueninsel and Herreninsel, each of which has its own sights to see too. On Fraueninsel is a monastery, which is known for its homemade marzipan and liqueur. Herreninsel, meanwhile, is home to the Herrenchiemsee Castle, which was built by King Ludwig II in the late 19th century and is modeled on Versailles. Das Achental is located less than a two-hour drive from Munich and under an hour from Salzburg.
