Key Responsibilities
  • Manage all functions of Food and Beverage department to achieve optimum guest satisfaction and departmental profit.
  • Creative and keep oneself abreast of latest Food and Beverage trends in the world.
  • Is self-driven and suggest fresh ideas and concepts as required.
  • Analyze the global trends by reviewing print and web-based media and attend local/regional trade shows and gastronomic events.
  • Prepare a yearly marketing plan for the department in cooperation with the Marketing Department including a competitor analysis and a revision of global trends.
  • Plan and organize successful Food and Beverage activities in the hotel along with the Executive Chef.
  • Monitor and constantly improve quality and guest satisfaction with Guest Satisfaction tools.
  • Outgoing personality with good guest interaction skills.
  • Excellent organizational skills.
  • Work with Human Resources to ensure departmental performance of staff is productive.
  • Review and plan departmental manpower based on operational needs.
  • Ensure training needs analysis for the Food and Beverage team is carried out and training programs are designed and implemented to meet needs (in collaboration with Training Manager).
  • Guide, coach, counsel and discipline staff, providing constructive feedback to enhance performance and develop the team.
  • Prepare Food and Beverage budget along with Finance and monitor department’s financial performance.
  • Determine with the Finance the minimum and maximum stocks of all operating supplies and equipment.
  • Be aware of duty of care and adhere to occupational, health and safety legislation, policies and procedures.
  • Desired Skills & QualificationsBachelor degree or equivalent in Hospitality Management or related field
  • Proven track record in leadership with at least 5 years’ experience as a Director of Food and Beverage or similar position.
  • Experience in a large hotel operation with multiple Food and Beverage Outlets and banqueting is an advantage.
Previous working experience in Asia is required
Excellent communication skill, both oral and written
Computer literacy – Ms. Office
Familiar with Micros/Repack system is an advantage
